PRUNE AND ALMOND BALLS

Four healthy ingredients that you bring together, no sugar added, no fuss and the end result is simply spectacular. These divine crunchy bites are a hit and while they can be easily stored in the fridge for several days, they will never make it to the fridge, guaranteed. It is so rewarding to make them when you are craving for some easy and quick to make dessert.


250 g prunes, pitted

40 mL dark rum

200 g almonds, sliced and toasted

50 g coconut flakes, unsweetened

In a small mixing bowl, soak prunes in rum for 30 minutes or until the rum is absorbed.

Purée soaked prunes in a blender or a food processor. Add half of almonds and pulse a few more times, until they start turning into flour. Transfer to a mixing bowl.

In a separate mixing bowl, roughly crush the other half of almonds, using a muddler. Add crushed almonds to the prune mixture and mix until well combined.

Form small balls with your hands and roll them in coconut flakes.

Refrigerate for about 1 hour before serving.
