FIG AND BABY SPINACH SALAD

Serves 6

I cannot think of a more easy to make salad where you just toss ingredients, make and drizzle the vinaigrette and voilà, salad ready. If fresh figs are not in season, dry figs will work just fine.


Salad

¼ cup walnut pieces, roasted 12 figs, fresh and cut into wedges 8 cups baby spinach ½ cup red onion, sliced ¼ cup Feta cheese, crumbled Honey Vinaigrette

3 tbsp/45 mL extra virgin olive oil 2 tbsp/30 mL balsamic vinegar 1 tbsp/15 mL honey 1½ tsp Dijon mustard 1 clove garlic, minced

In a large salad bowl, toss spinach, figs, onion, feta cheese and roasted walnuts. In a small bowl, whisk together olive oil, vinegar, honey, Dijon mustard and garlic. Drizzle vinaigrette over salad and serve at once.
