EGG SALAD ON BAGUETTE

Serves 4

What can be easier than boiling some eggs and putting together some beautiful tartines? Perfect for breakfast, lunch or a light dinner, this salad is healthy, quick to make, delicious, so satisfying and pretty as well. Enjoy!


5 eggs, hard boil and roughly chopped

40 g aioli, homemade

1 tbsp lemon juice

1-2 tbsp fresh chives, finely chopped

Pinch of chili

Salt and freshly ground black pepper to taste

Microgreens, for garnish (I used Asian blend)

Whole wheat baguette (or your favourite bread), for serving

In a medium bowl, mix chopped boiled eggs, aioli, chives, lemon juice, chili, salt and pepper.


Place a generous amount of egg salad on top of baguette slices and garnish with micro greens.
