This is simple vegan cake that is very rewarding and very low key. It requires a quick unpretentious mixing of the ingredients and about half an hour of baking and before you know it, you have your dessert ready. It is lovely served with vanilla ice cream or whipped cream and berries. Enjoy!
180 g/ 1 ½ cup all-purpose flour
35 g/ 1/3 cup cocoa powder, unsweetened
200 g/ 1 cup granulated sugar
1 tsp baking soda
½ tsp salt
250 mL/ 1 cup cold water
5 tbsp corn oil
1 tbsp apple cider vinegar
1 tsp orange extract (or vanilla extract, if preferred)
Confectioners’ sugar for dusting
Berries for serving
Preheat oven to 350°F /180°C.
Grease a 9-inch round springform cake pan.
In a medium bowl, whisk flour, cocoa powder, sugar, baking soda and salt.
In a large bowl, mix water, oil, vinegar and extract. Add in the dry ingredients and whisk until smooth and lump-free.
Pour batter into the prepared pan and bake for about 35 minutes until the top springs back when touched gently.
Let cool on a cake rack before removing from pan and dust with confectioners’ sugar.
