BANANA CHOCOLATE MUFFINS

I have been baking these delicious muffins over and over mainly because they are a perfect snack for Stefan to take to school, perfect for his school celebrations or fun fairs or just because they are simply delicious and easy to make. You can replace the orange extract with vanilla but I love the paring of chocolate and orange, every chance I have. You can adapt them for adults by adding nuts or any dried fruits you may like. The prep time along with the baking take just 40 minutes and you have your dessert ready.



265 g all-purpose flour

90 g granulated sugar

1 tsp baking powder

1 tsp baking soda

1/2 tsp sea salt

1 egg

118 ml/ 1/2 cup vegetable oil

125 g/ 1/2 cup plain yogurt

1 tsp orange/vanilla extract

3 medium size bananas, ripe and mashed

3/4 cup semisweet chocolate chips

Preheat the oven to 350°F/180°C.


In a large bowl, combine flour, sugar, baking powder, baking soda and salt.


In another bowl, combine the egg, oil, yogurt and orange extract. Stir this batter into the dry ingredients until well combined followed by the mashed bananas and the chocolate chips.


Fill greased or paper-lined muffin tray two-thirds full.


Bake for 30 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing from the pan to a wire rack.
